Chef Jose M. Ballester “Chelo”

Jose Miguel Ballester, Born November 18, 1980 in Philadelphia PA. Better known to every one as Chelo, Chelo grew up in North Philly up to the age of 12, it was then when his father witch was and who will always will be Chelo’s inspiration decided to move his son to beautiful Carolina Puerto Rico. Chelo’s father wanted him grow up close to his roots, one day Chelo walked into his grand mother’s kitchen and found her with a huge pile of vegetables and herbs. More than half of it was unknown to him, when Chelo asked his grandmother what was all this she replied “Esto es cariño mi hijo” (this is love my son) she was making her beautiful sofrito, the aromas of the mixture of ajices, garlic, recao and cilantro drove Chelo crazy, it was then when he fell in love with the kitchen and he never looked back.

At 15 Chelo took his first job, it was at a local butcher shop. The experience of deboning whole pigs and cattle was second to none. In 1999 Chelo decided to study Culinary Arts in EHSJ, after finishing his associates degree he did his internship at The Ritz Carlton San Juan as a line cook at the pool side restaurant, 600 covers for lunch were done daily and Chelo loved the adrenaline. In 2001 Chelo was offered a job at the Ritz in Garde Manger. Throughout his tenure at the Ritz he has held multiple positions, when promoted to Banquet Sous Chef in 2008 Chelo brought amazing passion and culinary innovation to a banquet experience. A plated dinner for 600 guests felt like a fine dining experience for 2. Presentations were impeccable. His first year as Banquet Sous Chef he finished with a 98.6% 5 star guest approval for Quality of Food, number one in the company respectively.

Chelo feels honored to have joined BLT Steak San Juan and as Chef de Cuisine. He looks forward on being the first local chef here at this establishment and working Hand in Hand with Laurent Tourondel. Incorporating island flavors to an American steakhouse will be his purpose. The use of sweet plantains, papaya, coconut, root vegetables and his grand mother’s sofrito will bring out the spice to his seasonal Black Board specials.

1. ¿Que le llevo a tomar la decisión de convertirse en Chef? ¿Hubo alguien que le Inspiro?
Desde temprana edad senti passion por la cocina, las increible aromas de la comida criolla me creo gran curiosidad. Mi primer trabajo fue como Carnicero a los 15 años. Cuando me di cuenta que todo conectaba ( Technicas / Destrezas / Conocimiento) decidi estudiar Artes Culinarias y hacer de esto mi Profesion / Carrera / Vida!!!. Mi ispiracion  y influecia por su Dedicacion / Compromiso y Lealtad siempre a sido mi Padre.

2. ¿Que le ha motivado para llegar a la posición donde se encuentra ahora dentro de la industria?
Aunque no trabajo en esta industria mi Padre siempre fue mi gran motivacion, Simplemente por su apoyo. Aunque ya no esta conmigo y papito Dios lo guarda en la gloria todo mi esfuerzo y empeño se lo dedico a el.  Cada triunfo y logro se lo dedico a el. Nunca lo olvido y se que esta muy orgulloso. Siempre lloro cuando veo donde e llegado y me acuerdo de mis ultimas conversaciones con el, me dijo un dia “Chelo tu vas a llegar lejos!!! Yo lo se….. trabaja duro y olvidate de lo demas”. Lo llevo en mi corazon y en mis pesamientos y en los dias mas dificiles cuento con su apoyo, se que esta a mi lado.

3. ¿Qué mejoraría en la industria gastronomica de Puerto Rico?
Algo que hay que mejorar en esta industria es la exposicion de nuevos talentos, Siempre estan los 3 mismos “Chefs” ( Treviño, Bennet, Pagan ) en las revistas o medios de comunicacion de la isla. Cuando ellos comenzaron no habia mas nadie dedicandose a esto. Pero en estos tiempos ellos ( Treviño, Bennet, Pagan)  no se comparan con el talento que hay hoy en dia en este pais. Pero ya tienen la dicha de tener el reconocimiento y exposicion. Pero no dudo que la industria esta tan cansado de ellos tanto como nosotros los Chefs que si estamos trabajando fuerte para crear arte y buen comida. Ya esta empezando a reflejarse el cambio y la exposicion de nuevos talentos.
