Chef Javi Sanchez

Javi Sánchez was born in San Juan Puerto Rico, his natural affinity for food became clear when he was young at the tender age of 10.

When he got his first job in a kitchen in Old San Juan, by chance, never imagined that his passion was so amazing that over the years would make him one of the new talents in the industry, in its infancy as a kitchen helper always knew what he’s wanted for deciding what is right has always been a competitive person, knowing that the road was long, but it is always positive.

Javi Sánchez is a self-trained chef. In early 2000 the young Sánchez moves to Philadelphia and began his career being interested in ingredients of Latin America to innovate with its Latin roots, after several years and collaborate, engage in various activities such as James Beard Foundation, Aspen Food and Wine and work of the hand of his mentor Guillermo Pernot.

He returned to Puerto Rico to ply his trade as a Chef in 2002 and run their new mergers in restaurants Hermes Restaurant, Tijuana Bar and Grill, Madrid San Juan Restaurant and Tapas Bar, Le Lo Lai Restaurant, his own Entona Latin Bistro restaurant, Tamarind Latin Steak House and Sea Food Bar, El Mariachi Mexican Restaurant, D’Rock Tapas Bar and lounge, his own VIP Tables Chef At Home And Catering, Jam Rum Bar & Bistro Moderne, are setting the fire with its roots in Latin fusion.

He now divides his time between the restaurant and its chef at home heating up the kitchen, mixing spices with its unique method and breaks the rules with its Latin twist to vibrate with their exquisite and delicious dishes to all its guests.
